I make a lot of this. The fermented cashew cheese is particularly good and tasty. IT tastes like the alouette cheese in the grocery. The fermented cashew cheese only has two ingredients, cashews and buckwheat groats. Clearly safer than the "junk" imitation cheeses in the grocery.
