  • Discover Quinoa

    I recently discovered Quinoa as a dietary exchange for rice, potatoes, etc. and am really enjoying it. I have a home helper who is Chinese and really helps me with finding the better way to watch my diet. I now mix equal parts of quinoa and brown rice in my rice cooker and in about 15 minutes have a tasty substitute for the heavy starches I loved so much. I usually use the broth from a home cooked chicken in place of water and it is enjoyed by my whole family, meaning we don't have to have "special" food for me. We are all on low or non sodium in the cooking as well as Splenda in place of sugar, so the transition has been so much easier. I still prepare potato dishes occasionally for the family, but I stick with the quinoa. Actually it is better tasting to me, anyway.

    Quinoa is high in potassium (K). I would be interested in how it impacts your K number?
